Egg Salad

[Tuddy]

6 hard boiled eggs
1/2 c mayonnaise
1.5 tbsp pickle juice
2 green onions chopped up greens and all
The meat off of about 3 pieces of bacon chopped up
1 tsp dijon mustard (I used dry mustard and cut it back a bit)
Salt and pepper to taste (if you use the bacon, omit the salt)
1/8 tsp paprika

Peel and chop eggs and throw in a large bowl.
Add every else, mix well and enjoy!

You are fancy. I add mayo and dried onion, mix, and eat.

I don't do anything resembling the traditional mayonnaise (shudder ) thing.

Ground cumin
Cayenne
Cider vinegar
Black pepper
Colemans mustard
Onion
Arugula or mustard greens

Love curried egg salad. I add raisins and celery for crunch.
